strawberry upside down cake




this is a recipe given to me by my dear friend, april. it is not only easy peasy, but super tasty. i made one change from her original. i used a white cake mix instead of yellow. here ya go! enjoy!

upside down strawberry cake

preheat your oven to 350 degrees

in the bottom of a 9x13 pan, cut up a quart of fresh strawberries. i simply sliced mine. sprinkle over the berries a 3oz package strawberry gelatin. now, sprinkle over the gelatin three cups of mini marshmallows. make your cake mix according to the directions and pour it over it all. bake about 30 minutes till done. i watch for my cake to pull away from the sides of the pan. cool about 15 minutes then invert onto a serving platter. this is good with vanilla ice cream, whipped cream or just a plain ol'fork!
