ps-grease and flour your bundt pan really well, especially those nooks and crannies, so you aren't missing a chunk of cake off the top like mine! i just "glued" it back on with some glaze. it didn't slow anyone down.

I made a lemon and polenta cake last year which I imagine was similar to this. I love lemon cakes.

Looks fantastic.
Have you tried baking with splenda or stevia. I use them and once you learn how to substitute, it is all worth while.
